I am really bad at this up to date stuff. But I'm getting better at it!! Soon I'll be regularly posting every month like I want to be. Well as you can tell by the date it is summer time and I am no longer in school, so I can't blame my lack of blogging on studies. But what I can say is that I have done more cool things both with food and life. Life wise: The magazine class I took was a lot of fun. We successfully produced a magazine for the College of Communication and Information. I will be getting physical copies once I return to school. I got to work Destination Imagination which is an INTERNATIONAL competition for grade school students. It was at the end of May so right after exams ended I took a short trip home and returned to Knoxville to get to work. Though I only got like 20 hours of sleep for a collective 10 days I can say it was a fun experience and I definitely want to do it again next year. The best part about the program was that I made $990!! Yes you read that right, my restlessness was a small price to pay for that good amount of money.
Now I am back home and in full swing at my internship. Through the help of my mom and her friend I am now working as a writing intern at The New Tri-State Defender Newspaper. My first day on the job was beyond my exceptions. Usually I am coaxed into what I will be doing but Dr. Karanja (Dr. K around the office) threw me onto a story within my first 5 minutes in the office. It was intimidating but I am finding my footing with the workload. I am learning so much working under Dr. K and writing for a publication that lead the news coverage for the Emmet Till case is a big plus in my book. I have already done an article on the oldest woman in Memphis and an up and coming clothing brand.
I am happy to be home and around my best friends. It's hard going to school in a city so far away from my 'roots'. With the change of season also came the change of heart. I was feeling tired and sluggish all the time so I pledged a bill of health to myself. Working out has become a regular in my routine but my eating habits were out of hand. So when I got home I put myself on a 'diet'. I haven't completely gotten rid of anything but I've moderated how I eat. I find that bringing a lunch to work is better than giving in and heading across the street to Rum Boogie's Cafe for discounted soul food (even though I want it so badly!!) Below you can see some of the healthy options I have adapted and the amazing meal I had on Father's Day at Ruth Chris Steakhouse. That stuffed chicken was so juicy and tender, Ruth Chris really gives customers a great experience. No wonder why the men in the family choose to go there every year. But salads and sandwiches have been my go to since I have been so busy during the week. I like the mixture of sweet and salty in my salads, a product of Mrs. Wirth (my advisor) putting strawberries and sweet dressings on our salads in meetings. My salads have been a mixture of spinach, feta cheese, craisins, almonds and Italian dressing. Sometimes I add chicken, just depends on my salad mood for the day. I use spinach on my sandwiches as well as any kind of peppers I can find. I found that I like a little kick on my sandwich. In the morning I eat fruit but if I have time on my hands I find that making one or two English muffin sandwiches is satisfying. Adding an over easy egg is a must for me, love the flavor combination. I will be pigging out for my birthday though, so that weekend doesn't count. I also decided to cut my hair. Lol think that's about it for now, see you all next time.
