Heat oil to 375 degrees in a normal size skillet.
In a small bowl mix salt, baking powder, and about half the flour in together.
Beat the eggs in a large mixing bowl; add in sugar and buttermilk until a creamy color appears. Combine the flour mixture, as you mix add in extra flour until desired thickness and consistency is achieved.
Before you start cooking test a small dollop of batter to make sure the oil is properly heated. Once the piece is ready you can start making your cakes.
To get a big fluffy cake the use a funnel or plastic bag. Slowly drizzle batter into the oil, leave spaces from even cooking. After a minute or two use tongs to flip.
This recipe makes about 3 funnel cakes. Cover with powdered sugar and enjoy!
